Polk Salad with Eggs

Polk or American nightshade is easy to recognize once you know what it is.


5 servings

4 cups polk salad (or spinach)
1/4 garlic (fresh/minced)
1/4 cup onion
1 tsp salt/pepper to taste
1 dash oil/bacon dripings (best)
7 large eggs


If polk salad is fresh it must be cleaned and boiled then drained and boiled again and drained and boiled then drained, easy and quick !

strain out as much of liquid as possible out of greens

heat oiled skillet and saute onion and garlic in skillet

add greens and saute for about6-8 minutes

season to taste & add eggs to skillet and cook until eggs are mixed and fully cooked thru out greens

( Only the experienced should handle the plant, which should be picked only in spring when it has fewer toxins and while wearing gloves for those who may be sensitive to it in its raw form.)

So why bother with it at all? Because it provided much-needed nutrients for the rural poor, and many felt it had healing properties.

Pick and wash poke salad, bring to a rapid boil for 20 minutes. Drain and rinse with cold tepid water. Bring to a rapid boil, starting with cold water, for a second boil for 20 minutes. Again drain and rinse with cold tepid water. Now for the third time, starting over cold tepid water bring to a rapid boil for 20 more minutes.

Drain and rinse with cold water. Let drain completely.

Notice how Quicky the Polk Salad is made ready ?
